So I made this desiring a more adult taste. This is simple and so delicious!!!
1 Kohlrabi, Peeled and Shredded
1/4 Cup Chopped Red Onion
1/4 Cup Chopped Cilantro
1 Carrot, Shredded
1/4 Cup Chopped Roasted Red Pepper
4 Tablespoons Mayonnaise
2 Tablespoons Dijon Mustard
Juice of 1/2 Lemon
Pinch of Salt and Pepper
Using a paring knife peel the whole Kohlrabi…
This is what it should look like… I sliced it in half to grate a little easier. (see photo) Grate using a box grater.
Add chopped cilantro.
Add Roasted Red Pepper (I always keep Mancini Roasted Sweet Peppers in the pantry and in the fridge. They are an amazing addition to many dishes.)
Throw everything in a large bowl and add Mayonnaise, Mustard, Juice of 1/2 Lemon, Salt and Pepper
